Double Chocolate Brickle Cookies

Chocolate = Good

Double Chocolate = Very Good

Brickle (tiny piece of Heath) = Excellent



These cookies are a concoction made from random ingredients I had on-hand in the pantry and the ideas in my brain.

Here's what you'll need:

  • 1 stick (1/2 cup) unsalted butter

  • 1/2 tsp salt

  • 3 TBSP unsweetened cocoa powder (I used Hersheys)

  • 3/4 cup light brown sugar

  • 1-2 tsp vanilla (I measured with my heart, so it was probably closed to 2 tsp)

  • 1 egg

  • 1/2 tsp Baking Soda

  • 1 1/2 cups all purpose flour

  • 1/2 cup of semi-sweet chocolate chips

  • 1/3 cup Heath bits or Brickle


Here's what you need to do:

  • Heat your over to 350 F. Line 2 baking pans/cookie sheets with parchment for easy clean-up later. If you don't have parchment, that's ok. You don't need to grease the pan, but you will need to wash it after your done baking.

  • Melt the butter in a small sauce pan. I was going for a brown butter effect, but it didn't quite work out and butter burps that hit your skin hurts! So, you can do this in the microwave if you'd like.

  • Add the salt to the melted butter and stir well.

  • Put the melted mix into a mixing bowl (You can use a stand mixer for this)

  • Add in the brown sugar and vanilla. Mix for a minute or so, til all is well mixed together. Then add the egg and mix well again.

  • Add in the baking soda and flour. I don't typically sift them together, but you can do that if you want. Mix until just combined. Feel the dough. If it's super sticky, add 1/4 cup more flour. The dough should be a little sticky, but not so much that it's still on your fingers after you touched the mixer paddles. If the dough is super dry, add a tablespoon of milk or cream at a time until there's a little stickiness.

  • Add in the chocolate chips and brickle and then mix for 30 seconds or until the chocolate chips and brickle are well disbursed through the dough.

  • Grab your cookie sheets and prepare to get your hands dirty

  • Grabbing pieces of cookie dough, roll balls about 3/4" like a small meatball

  • Place the dough balls on the cookie sheet about 2" apart. Do NOT flatten.

  • Bake the cookies for 10-14 minutes at 350 F. I baked mine for 14 minutes and it was probably a minute too long, but ovens are tempermental, so keep an eye on the oven after that 10 minute mark to ensure they are the doneness that you want.

  • Let cool on the pan for 1 minute before moving to a cooling rack

  • Enjoy!
