The Softest Sour Cream Cookies

We have a big tub of sour cream in this house which is uncommon, so I have been trying to find ways to use it up. The orange scone recipe used some which was the original intent for the purchase and tonight we're having tacos for dinner, but we still have a lot left. Which brings me to sour cream cookies.


A friend of mine uses sour cream in her Christmas cookies and I will say that they were very tasty and very soft. I researched a lot of recipes and this is one that I personally think is really great. It produces a nice soft cookie that doesn't need a dressing, but a little glaze or powdered sugar never hurt anyone!


Note that I am using vanilla extract in this recipe. I think these would be great with a citrus flavor like orange or lemon or something like that. Next time you're at the store, check out all of the extracts they have to offer. I am using vanilla because my kids won't eat anything "exotic."


Here's what you will need for this recipe:

- 1/3 cup (or about 6 tbsp) soft unsalted butter... basically room temp

- 2/3 cup granulated sugar

- 1 egg

- 2 tsp vanilla extract (note: I use Pure vanilla, not artificial extracts - it's more expensive but a better taste)

- 1/2 cup of sour cream

- 2 cups all purpose flour

- 1 tsp baking powder

- 1/4 tsp baking soda

- pinch of salt


Here's what you need to do:

1. Heat your oven to 350 F. Either convection or standard oven will need to be 350. The bake time will be a little different though.

2. Beat together the butter, sour cream, vanilla, and sugar til creamy. Then add in the egg.


3. In a small bowl, mix together the flour, powder, soda, and salt until combined.

4. Add the dry stuff to the wet stuff (I'm getting really technical, I know)

5. Line a cookie sheet with parchment paper. This will be great for easy cleanup later and prevent any sticking.

6. Using a cookie scooper or melon baller, scoop out the dough into balls about 2" apart on the cookie sheet.

7. Bake at 350 F for 8-10 minutes in convection oven or 10-12 minutes in a standard oven.

They should be just a little golden on the bottoms.



8. Let cool on pan for 1 minute before transferring to a cooling rack. Let cool on rack for a bit and then add glaze or powdered sugar.


Note: an easy glaze recipe is 1 cup powdered sugar, 1 tsp vanilla extract, a tiny bit of salt, and 1-2 tbsp of milk. Mix and then pour over cookies.
