IamBaker's Ooey Gooey Lemon Cookies

Over the weekend, I had the pleasure of making something different. Yes, I have made a lot of cookies over the years, but never this specific recipe. I love pretty much anything with lemon flavor (except for lemon chicken).


Truthfully, I wanted to make this recipe a week ago, but I couldn't find my darn zester. We recently moved, but I knew it was in the house somewhere! So, yesterday, as we were making dinner, I told my husband I was missing the zester and he found it in a second. I think he had some sort of conspiracy against me using it. I know I looked there 2 days ago and it wasn't there. Do you think your spouse hides kitchen tools from you so that you can't bake?! Yes, I am a little crazy.


Now that the zester was found, I was able to zest about a teaspoon of lemon zest from one of the lemons I bought a week ago. And it was just in time too, because the lemons were starting to get wrinkled and super soft.


I will tell you that I hate washing the zester. The little pieces of lemon get stuck in the little grating holes. I try to wash it immediately after use so that I get those pieces out before they harden. I am not sure how people clean these things. The dishwasher never gets it clean either. I sometimes even resort to taking a toothpick and poking out the little bits.

Now, I did do one thing differently. I refrigerated the cookies for about ten minutes. Because of the cream cheese in the recipe, I was worried that these would get really flat, but honestly, after baking I don't think that refrigerating did much. So I won't refrigerate in the future.


These cookies are definitely gooey. After I baked them and I taste tested, I was almost certain that they were not baked all the way through, but then remembering that there is cream cheese in the recipe, they will stay soft.


In my opinion, these are almost like eating a cheesecake bite. They are very tasty and they would be especially tasty with some good vanilla ice cream and fresh raspberries!
