Reese's Pieces Peanut Butter Cookies

I LOVE PEANUT BUTTER! It's so delicious and I'd like to think it's good for me since it's full of protein, so if we go with that logic, then these cookies are really good for you as they are packed with peanut butter! And chocolate is also good for you... serotonin booster and chocolate is known to take care of bad breath... You can thank me later.


I was at a local general store when I saw the Reese's Pieces minis just sitting on a shelf. I am pretty sure they were screaming my name. I grabbed them and they didn't sit in the cabinet long before I had to bake something with them.


These are so good. Fresh out of the oven, they practically melt in your mouth. The next day, they are so soft and it's easy to eat 5 or 6 without even realizing it, or so I have heard. ;)


Here's what you'll need to make these delicious cookies:


- 1/2 cup of unsalted butter (softened, room temp)

- 2/3 cup creamy peanut butter (I used JIF)

- 1/2 cup of granulated sugar

- 1/2 cup of light brown sugar

- 2 tsp of vanilla extract

- 1 egg

- 1 tsp baking soda

- 1 cup of all purpose flour

- 3/4 cups of Reese's Pieces

- 1/4 cup of semi-sweet chocolate chips


Notice that I don't add any extra salt in this recipe. Peanut butter has a lot of salt in it and I don't feel it necessary to add anymore, but if you really love salt, add a pinch.


Here's what you have to do:

  1. Heat your oven to 350F. Line a cookie sheet with some parchment paper (makes for easy cleanup). If you don't have parchment, you do not need to grease your pans.

  2. Cream the butter and peanut butter together for a couple of minutes. You don't want to see the butter or any lumps. Add in the sugars and vanilla. Mix for another minute or two. Then throw in the egg.

  3. Add the baking soda and flour. I rarely mix them together in a separate bowl first. It's a waste of a dish and I hate washing dishes. Try not to over-mix. This means, don't leave your mixer running while you throw in a load of laundry or chase the kids around the house or while drinking wine and reading a magazine. Ugh.... those things never happen here.

  4. Add in the Reese's (eat a couple for quality control before putting them in) and the chocolate chips (eat a handful for quality control of these too). Mix for a few seconds.

  5. Using a cookie scooper, scoop dough and space about 2" apart on your cookie sheet.

  6. Bake for 8-10 minutes depending on oven. On convection, in my oven, they were done in 7 minutes. You want that lovely golden brown on the bottoms.

  7. Let these babies cool on the cookie sheet for 2-3 minutes before you put them on a cooling rack. Peanut butter needs a moment to get itself together before you can move it around otherwise it will break. Much like me on a hormonal day. lol

  8. These are ready to eat in about five minutes!


I love these and I think they'll become something I add to my Christmas cookie platters. They were quick and easy and obviously delicious!
